I'm going through an insanity playthrough but I'd like to create a save after getting the essential squadmates, then switching over to hardcore so I can explore the game more thoroughly without constant fear for my life...then once I have completed that playthrough go back to my insanity playthrough save and follow the 'express' path to the end to minimize game time in the insanity difficulty. My question is whether I'll still get the insanity playthrough achievement by doing this? I heard the game doesn't like you changing difficulty in saves?

I think a safer route would be to keep a save after getting your squad together. Plow through insanity, ignoring as many side missions as you please, THEN go back to that early save and play at a more leisurely pace at a lower setting. Or just do a NG+ from that point...I mean, Eden Prime and the first Citadel part can be breezed through in a couple hours tops.
