Wouldn't see much fun playing the game multiple times without mixing gender, race, sexuality, color and all that stuff in each playthrough.
About how I view it. What keeps it interesting is variation on a theme, exploring the many different experiences scripted by the designers into a game and getting to play again with a whole new point of view. I do tend to begin new games with females though despite being male- probably because they're more enticing to look at and I get protective of them, making the devotion of absurd hours to a game that much more salient. Sexy sells... My first characters in BG and NWN were both female- my primary DAO character also a female (and also a dwarf rogue as was my first character in NWN). Then I end up mixing things up fairly evenly on sex, race, etc., trying anything at least once, pushing boundaries.
But I seem to be approaching "game immersion" differently from most people. For me I never feel "as" the character. Everything is always 3rd person with me just sort of there with the character using a very sophisticated remote interface. I don't die when my character does, so I'll always have a metagame safety seat while my character won't (and will rely on me to save them with reloads hehe). So I don't need a facimile-me character so much as a genuinely interesting character- both to watch and to guide. I may even identify with the character in some ways or care about them a lot, but I never feel it's me. If the game itself is immersive I'll be very connected to the character's story development, imagining how they're interacting with their environment given their personality. But, I mean, I can't really play me: it's not even reality (where I live). And since it isn't me, I just go with what feels good to give a whole playthrough game life to.
