Having played both ME2 and ME 3 quite a bit, I am finding I generally prefer the ME2 battlefield layouts. I like the long "tubes" you have to fight down with enemies spawning further down the "tube" as you press forward. The battlefield that particularly stands out for me is the Dantias Towers (Thane's recruitment). Garrus's loyalty mission has some of this too, as does Miranda's. I love leapfrogging my squad forward from one cover to the next as we fight our way forward. Makes me feel like I am actually commanding a squad rather than just calling on them occassionally for support with their powers. That particular battlefield makes me think there should be a "leapfrog" command that would tell one of your squadmates to move to your current position while you displace to another. This would work especially well with Kinect: "Liara Leapfrog". Wouldn't have to worry about pointing your cursor just right; the squadmate would just move to where you currently are. No fuss; no muss.
Another aspect of ME2 battlefields I like is the long engagement ranges possible. A sniper can have a field day on most of ME2's battlefields. With ME3, not as much.
What kind of battlefield layouts do you prefer?
(Note, I am not even mentioning ME1 because none of those battlefields stood out as interesting to me. YMMV)
