Honestly the Original fights weren't really that realistic.
They were better though in that the characters were actually making strikes and parrying, instread of doing stuff like this:

Great, DONNy YEHN! I am yet sceptical. He is a great martial artist and choreographer in both the eastern and western movie world but I think his work, especially the older stuff, is far too brutal and nerve-wrecking for a Star Wars Family movie from Disney...Judge for yourself and imagine such drastic brutality and adrenaline-filled action with Jedi and Lighsabres, Sith vs. Jedi, Light vs. Dark!, it's this eternal conflict brought to life on cinema!...just as if he had anticipated he would years later work in the Star Wars Universe! But the sheer brutality...
But don't blame me if you can't stand the epicness of Donny Yehn! Donny, you damn genius *sniffs*

I love that fight, not as much as Episode V or VI. When Luke goes full berserk on Vader is epic, no technique just bashing him with the saber until the hand comes off. Glorious moment. Still i would rate the Episode III fight as the 3rd most awesome lightsaber "duel".

Well Vader has his suit which really constricts his maneuverability and Luke had to basically train himself after Ben died.
Also, though it's probably reading too much into it, I think it fits with the era's. I mean before the fall of the Republic it was supposed to be a much more refined and elegant time, even during the Clone Wars. It makes sense then that the Jedi's swordsmanship would be much more flashy and articulate. Where as after the rise of the Empire everything has become much more restricted and basic (I.E. Ships and tech compared between prequels and OT).
Also to go back to the former point. Vader was always an aggressive fighter, and even though his suit limited his movement he was still one of the best swordsman the galaxy has ever seen. But like I said earlier his suit limits his maneuverability, and that effects things like being able to use tight/close techniques.

Yeah, That video looked a lot like Batman: Arkham City/Origins/Knight/Asylum where you only need to press one button to counter, then everyone is just like there waiting for you to break that guy's legs to resume the fighting.
Why would everyone attack at once? Someone could get hurt doing that.
