It's really a mix of both practical and CGI though. They're just boasting about the practical side since the last three films went a bit overboard in the CGI department.
It's not just about the prequels (and watching that American Diner Alien you will understand why people want more practival effects, he looks as fake as possible..)
CGI is getting into every kind of movie, and filling them up to the rim. And I speak about CGI you can clearly identify as such. Also, CGI has such a habit of "getting old" within only a couple of years. And it usually looks a lot cheaper too ...
I recently re-watched an old 70s movie called "Waterloo", which has gigantic mass-scenes of soldiers fighting and marching. It still looks amaing, especially one huge cavalry-charge of the french army. And I had to think about Lord of the Rings 3 ... and how fake the Rohan-Charge on the Pelennor-Fields looks compared to this...
That'S why I am totally forgiving if they boast a bit too much about their practical effects. I'd rather see a handcrafted puppet actually on stage and actors ACTING with this puppet than a fully-animated CGI-Creature that was never on stage...and the actors were interacting only with a tennisball in front of a green screen. Those Prequel-Making-Ofs still look so depressing to me, with George sipping coffee and Ewan just looking confused on the green screen stage^^
