Same way we "see" black holes... by the surrouding damage
I don't know about books or comics but his survival in this manner wasn't unique in Star Wars. Darth Sion was basically an immortal corpse that sustained itself through the dark side & sheer will. Maul merely tapped into a weaker form of that same force power without even realizing it. He seems to understand he sustained his life with the dark side, but he doesn't reach the conclusion Sion did about using it for immortality. If Maul had understood that power better he could have become the new Darth Sion. That could be a good jumping off point for a one-shot what if? story. Have him cut down in his fight with Palpy.... But then surprise Palpy by getting right back up again & again until Palpy has to back down. A new immortal Dark Lord of the Sith.Maul being sliced in half, falling down a 700 meter shaft, and somehow managed to "crawl" off an enemy planet and escape, with no medical aid, isn't "handled extremely well". Not when the only explanation for it given is "he had a lot of hatred in him". That is rotten writing.

They removed Sion from the canon, so anything not in the movies or cartoons are trashed now. Besides. The cartoon offered no explanation at all. Just that he had " a lot of hatred in him".

You might be right. I think that Palpatine might have used the force to kill her in some manner, a droid wouldn't be able to find any evidence of that and it would make it to where he was the only person that Vader had left. It certainly isn't impossible, Darth Vader was able to choke Admiral Ozzel from a different star system in Episode V.

"Broken heart" deaths are actually a thing. It's not that unrealistic considering that her husband murdered a bunch of kids, betrayed his friends, plunged the galaxy into more war, and even tried to kill her (with added strangulation). She also had to give birth immediately after.
Whether or not George Lucas actually put thought into that is left to imagination.

There´s a limit to how much one can go through, from the guy she put in charge destroying everything she believed in, to her husband turning a monster because of fear of losing her, Anakin´s attack, and then being induced a twin birth in such a state (who on the GFFA programmed those robots?). I also tend to think the choke was more than a physical attack, also wounded her at a spiritual level. But in the end it all amounts to not having a big 3 character dying offscreen and the narration saying it 3 movies later. Ironically, dying also helped Luke and Leia, there´s a good chance Vader might have sensed her alive, and found them.
About Maul, well, Zaheed Massani said it better.

I would agree, except for two scenes: Mace's death & the duel preceding it. What a cringe-fest
