They don't need to wait THAT long Hanar. MLP had a whole first season of episodes really focused for the kids as the main demographic, and then it was season two, after the creators had time to accept the fandom explosion for the show, when they started going out of their way to throw nods towards the adults watching the show.
All RWBY needs is a solid first season, and then they can start to explore the odd here and there.
Of course, it depends on exposure. Red vs Blue was mainly the same for the first 5-6 seasons or so, and then changed massively with Project Freelancer thanks to-
A. Monty being hired
B. Roosterteeth growing in popularity
RWBY's started out with quite a sizable fan base right out of the gate because RT's fan base is quite large at this point AND its Monty's own project.
It won't take five years for the odd sort of thing to show up from time to time.

Single character that we already know going evil that hasn't been evil already? No idea. Could be anyone, I think the only one really off limits is Ruby.
Group of characters? CRDL is too easy but yeah.

I don't think Nora would be a good evil character, but I think it would be cool to see an angry, aggro Nora. That would be intense. Maybe a situation where Ren is in danger?
