I keep trying to get into this game because of all the great things that people have said about it. The problem I'm having, though, is that I can't stop restarting. Between the races, kits, and multiclass combinations, the game gives you so many options. I'll start as a monk, play for a while, then think of how cool it would be to play a barbarian. So I restart. Then I start to think about how fun it would be to play a fighter/cleric. Then kensai/thief. And on and on. I cannot get past the initial area where you're raising money to save Imoen.
Any advice?

I know it's 20 days later, but I have the exact same problem. I'm kind of the opposite though because I know exactly what kind of character I want to create, but I'm such a perfectionist that I end up restarting over every little flaw, and wind up restarting the same character with minor alterations 20+ times.
Since you seem to be restarting over class though, I'd say go straight to the area that lets you fight first and pick the class that has the fighting style you like best. Combat is a huge part of the game and if you prefer magic to weapons, or greatswords to one-handed weapons, or like acting as the tank (the front-line guy that takes and dishes the most physical damage) versus the archer or spellcaster, then go with the one you enjoy most.

I have the same chronic issue myself. I have a hard time just playing a different type of character. I seem to always play the same one. Ugh, very annoying and I'm a perfectionist on top of that as well.

Well, I finally finished SOA. However, I am now restarting rather than going on to TOB.
The party I finally played through was a custom party:
Dwarf Berserker
Human Cavalier
Human Monk
Half-elf Totemic Druid
Half-elf Skald
Human Wizard-slayer/Thief (replaced by Imoen)
The reasons I'm restarting instead of going on into TOB:
1. I feel like I didn't fully experience the game because I didn't use the NPCs
2. I feel like I sort of cheated because custom characters are better than the NPCs
3. My main char was a berserker and I don't think single classed fighters scale well into TOB
I'm just glad I found a way to play through the story though. It really is a great game with the story elements and all the little twists and puzzles along the way.
The party I'm probably going to play this time:
Human monk (I just have a thing for monks, can't explain it)
Keldorn (Cavalier)
Anomen
Jaheira
Nalia (Skald)
Yoshimo/Imoen

I"m not sure I understand your point #3 - berserkers are a great class - they can nearly solo ToB even. I took a berserker from Candlekeep to Final ToB Fight (with parties), and he did fantastic - great saves, Thac0 and tough, what more you want from a dwarven berserker? I see you have a druid and bard as support, with that kind of support, it almost doesn't even matter. Druid summons can make a huge difference in many ToB fights, including the final one.
I don't see why you think custom parties are cheating - it's the only way to get certain class combos (16 BG 2 characters is not enough). Besides, goot stats is not enough to win. You still need good strategy/tactics, otherwise you can get petrified, disintegrated, imprisoned, held, etc., regardless of awesome stats.
But if you feel you gotta restart, then I guess you have to do it.

Well, everything you said is true. I'm sure I could easily finish the game with my berserker. It's just that it's not "optimal." A fighter stops adding power as soon as his THAC0 is enough to hit everything, which happens pretty early with the right equipment. Some kind of multi or dual class is more powerful at the higher levels. Fighter/cleric, fighter/mage, and fighter/thief will all outshine a single classed fighter after level 20 and probably much sooner.
Still, I think the biggest motivation behind restarting is experiencing the banter and quests of the NPCs. I still sort of cheated by making Keldorn a cavalier (though many would argue that's a downgrade) and Nalia a skald, but I didn't change any of their stats. I just don't think Nalia should be a lesser Imoen. That's not interesting at all.

It's been a long time since I built custom parties of 6 but from memory single class fighters or paladins took a long time to be overhauled. Their extra hit points help in tough fights and against spells that cause massive damage, multi-class and dual-class characters will not accumulate so many hp's.
A party of 6 would typically see high level abilities arrive towards the end of SoA or start of ToB and that gives the fighter types another power hike, at 4m xp they will be significantly more capable than at 3m xp and so on.
