If You HAD to Cut more than 5 Squad mates from the Series, who would they be?

Next would probably be Tali. Her contribution to the first game is to provide valuable intel, which, like Liara, does not automatically elevate her to combat readiness. Then she's optional in 2 (you can skip Haestrom entirely and move on with the story) and in 3, she's an eleventh hour party member whose involvement in the plot ends at Rannoch. Like Liara, she could have gotten by purely as an NPC and not a squadmate.
I actually like Jacob, but the problem he has is that they clearly created him with no idea what to do with him. Although I like him for the fact that he's out to EARN Shepard's respect, as opposed to expecting Shepard to fall in line with Cerberus on their say so, I'd probably cut him because his character's contribution is so minimal in the overall scheme.
Although I love Zaeed and Kasumi, since they are DLC exclusive, to the point that my first run of ME2 didn't involve either of them, they would probably also be on the chopping block. I think they're fun, but I would only cite Zaeed as essential if he'd been a batarian with conversations about the batarians, while Kasumi being recruited for the Suicide Mission seems a bit of a stretch already, it seems reasonable to just pull her entirely.
If we discount DLC characters, though, I would probably also not have EDI as a squadmate and keep her as just the shipboard AI. It would have been rather interesting to see her develop without going the obvious 'I must resemble humans to understand them' route. I would also probably cut Thane - a stealthy assassin has limited uses on a mission set up like the Suicide Mission.
So Liara, Tali, Jacob, Zaeed/EDI, and Kasumi/Thane. If pushed, I'd probably put Grunt or Jack on the chopping block behind them, as they serve a useful purpose on the Suicide Mission, but not really beyond it.

Liara is really pointless as a squadmate in the first game - she's never been in a combat situation before, and her only reason for even being a squadmate there is to decipher the vision, which, really, doesn't mean she should automatically get elevated to squadmate. Yes, there's Benezia, but Liara is not a required squadmate for that mission, and, again, I point to her complete lack of combat experience. You don't want someone who's never held a gun before in their life on the battlefield for the first time in a life-or-death fight against their mother. Everything that she does, she could have done just as easily as an NPC and not a squadmate.
On the basis of roleplaying, I tend to leave Liara on the ship throughout most of the game, save Noveria and Ilos, as she's just a "young" scientist that has some insight on the Protheans, so isn't really the best fit for a regular squad member in this theme, since this is still a military vessel with actual soldiers who are actually assigned to this mission. From a gameplay perspective, however, she's actually really useful as a squad member, since only she and Kaidan are the proper biotics on the team, and is the only viable alternative as your team's biotic specialist, should you choose a non-biotic or hybrid class, and choose to save Ashley on Vermire.
Your statement about her never holding a gun before is false. This is never said anywhere in the game. Ironically, Kaidan, your only Alliance biotic on the ship, has no more weapons capability than she does.

Liara and Miranda both have a part in bringing Shepard back to life. Arguably moreso Miranda than Liara. Mordin develops the anti-Seeker countermeasure that allows Shepard and co. to effectively engage the Collectors in ground combat.

1. I never said that Kaidan is an adept, but he does have 4 useful biotic talents, as opposed to Liara's 6.
2. I did forget about Wrex, but if I did remember him, I'd also point out that he too can die on Vermire, leaving you only Liara.

Jenkins: The traditional rpg first teammate who gets almost immediately killed and replaced with someone more permanent. Just put the guy to hospital and start the game with 1 teammate since Jenkins "slipped" just before landing.
EDI: the mobile platform. If you need to get rid of someone, then start with this one.
Zaeed & Kasumi: Nothing against them. Kasumis own mission was quite fun even, but someone needs to go.
Jacob: Of the standard teammates Jacob is the least interesting. Plenty of soldiers and plenty of biotics available. To me his story was not that interesting either. Besides he cheats Shep potentially...

Jacob's daddy issues felt tacked on in an attempt to make him interesting and I hate FemShep's voice acting when talking to him.
Liara like Miranda has a great power set but would work better as a romancable npc.
I don't dislike James but I would rather Grunt had come back than a new character trying to take over the krogan/bruiser slot.
The VS doesn't return as a squadmante after becoming a Spectre but gets their own squad and SR1 stealth ship. The romance continues as soldiers separated by war communicating by vid com and meet-ups on the Citadel.
Bonus: EDI should only take over Eva's body for the Chrono Station mission if gameplay wise you're short on a tech squadmate.

I like how if you replay ME1 on high/max level, and do auto-level ups for squad members, Jenkins has quite a lot of categories maxed out, yet none of that helps him against the geth drones.

Jacob and James. Both really serve no purpose other than to take up space. And maybe move the story along.
EDI. I didn't like what they did to her in ME3. I would've preferred her to stay the voice of the ship. Find another LI for Joker.
So Zaeed, Kasumi, James, Jacob and EDI. But all this would be much harder now with the Citadel DLC.
Glad I don't have to choose. But what about the crew that I missed. My first play through I lost half the crew in ME2.All my others I managed to save them all. That said (and ME3 played) too bad I could'nt have *everyone* in Citadel. Like Mordin, Thane, Jenkins, Kelly, Dr Chakwas, Anderson, and Eve. Would've been great if Wrex (or Wreav) showed up with Eve. Assuming she lived.

EDI - The squad member, not the actual character.
Jacob - Never ever bought those drinks.
Liara - Unkillable, more or less solved everything, and gave Shepard's body to Cerberus.
Miranda - "I'm so perfect, woe is me."
Javik - Uh... needed to make this list longer than 5.

She's your only pure-biotic though, and her biotics are mental in ME1. By the end of the game you walk into a combat situation and before you can hit the mouse button every enemy there just starts flying around the room.
I'd get rid of Jacob, he was both dull and didn't seem to do much. Kasumi didn't add anything either I felt. The idea of Samara was a good one and her VA was good but the way she never expressed any opinions about what you were doing and never tried to interfere when Asari were being difficult never worked for me. Vega would go, he was a pillock and added nothing. I'd also get rid of Legion, his skills were pretty useless by the time he was added and I never used him.
So Jacob, Kasumi, Samara, Vega and Legion.

Would it have been better to have Shepard's body go to the Collectors?

That's plot critical, not mission specific critical.
Mordin is essential to the plot but other than his loyalty mission, there's no mission that you have to take him with you. As soon as you get a third companion in the ME series, other than loyalty missions, the only time you're forced to take someone is Liara in two DLCs (From the Ashes and Shadowbroker - which could be considered her loyalty mission), the Thessia mission, Tali if she's alive for Rannoch and EDI in Chronos station.

By this logic, there isn't a single squadmate who is at all "relevant" except for EDI, and even EDI is only "relevant" for about 7 seconds. Liara and Tali don't do anything particularly special on their respective arcs, nor do they do anything that demands their specific talents.
