I must say I like how simplistic it is, but I'm confused about how I can monitor the health and shields of my companions? Like, I didn't notice any bars for them near their faces. Am I missing something?

I'm also confused on it. The ammo part is simple but the hud for your squadmates looks weird.
Their is an arch and a line and something that fills next to their faces...

I think there's an arc shaped bar under their faces that monitors their health. It may be used to monitor something else, but I doubt bio ware would omit something that important.

Why do I have bobbleheads on my otherwise clean, immersive screen?!

The bar underneath your teammate's portraits is to tell you if they are under cooldown after using a skill. If you see no bar, they are free to use any power. The arc shaped bars on either side of the portraits tells you if they are taking damage or not. If those bars are blinking red its a sign your teammates are about to go unconscious.
Not the most informative HUD but certainly very simplistic and easy on the screen real-estate.

Someone immediately after release commented on how silly it looked having squadmates faces seemingly attached to Shepards bum.
Unfortunately, I've never been able to get that out of my head when I play.
ME1 hud for ME3 pls
