I know you guys probably see a lot of threads like this but I couldn't find a answer.

I recently beat the game on Hardcore and want to beat it again on insane before 2 comes out.
What I want to know is If I use the character I beat the game with on Hardcore will the import save erase the data of my completed hardcore file and make it so that I can only use the insane playthrough once I beat it for importing?

Or does it save every playthrough behind the scene's so that you can use them at a later date for importing?

Every time you beat the game it makes a save that contains all the information from that playthrough. If you chose to go newgame+, you are NOT erasing that earlier save.

So, if you beat the game more than once, do you have to use the last file you made when you import? Or can you choose which file?

You can choose. A good way to think of it is it saves each characters "Career" and when you choose to "load" a game instead of "continue" a game you get to choose which "Career" you want.
