It depends on your style. I opt to play extremely aggressive as a Vanguard, frequently charging into the "eye of the storm" and Nova-ing soon after. My gunplay is split between the aforementioned and occasional grenades. Pure caster classes typically boil down to cover and combos. In fact, Adepts will likely surpass any gun if you can trigger constant explosions.
I rather like Soldiers, or rather did in ME2. However, I find playing the game as a straight shooter cheapens the experience. If I wanted that, Call of Duty simply offers more gameplay wise than Mass Effect, under those parameters.

Play insanity with a vanguard and tell me you won't be a one trick pony, think about it. Lose shields instantly, charge, lose shields again, charge want to get a slight power boost, charge. It gets repetitive on the harder difficulties (which i play) really quickly so a vangaurd would be worse than a solider in terms of variety IMO
I cannot deny my frequent use of Charge, but Nova sees plenty of action, as does Inferno Grenades and the occasional pull. This being on Insanity. And my shields do not drop near as constantly as you've implied.
