I was just wondering at what level the DLCs should be played (Bring Down the Sky, Pinnacle Station.) Should I wait until I complete the game or do it before? If so, at what point? (after 1st planet, 2nd, 3rd, etc)

Since the reward for BDtS is the highest level armor possible for your level, I would wait until just before Ilos.

And Pinnacle Station is basically just one big training ground. I don't think many people consider it canon to do at all. I certainly don't.
You can do it early for the XP (but bare in mind you only get XP for completing the missions, not for individual kills, so the amount of XP on offer here is limited) but on the other hand it is also rather hard. I think it was designed to give people a fun combat arena for their level 60 beasts.
My advice is to do it post-game if at all.
