Going onto Medi-Gels: How do Medi-Gels work? It's some sort of scanning effect that happens on the person using it, and it patches up wounds and does other good stuff. But how does this holographic effect work much like Tech armor or the Omni-tool? How is it interactive upon flesh or objects?

It heals various wounds and ailments, instantly sealing injuries against infection and allowing for rapid healing by having the gel grip tight to flesh until subjected to a frequency of ultrasound. It is sealable against liquids - most notably blood - as well as contaminants and gases.

Some kind of proximity sensor? Or implants - as the haptic adaptive interface codex entry says the finger implants necessary to use them are quite common.Doesn't that hurt? And how would people activate the omni-tool without some sort of switch on kind of mechanism?

The suit that characters wear is pocketed with dispensers, as per ME2. This contradicts the actual clothing of certain characters, but I see that as more of a design decision than a strictly lore adherent one.

Only from parts that are used in the fabrication process. Like, taking tin and copper and making bronze. It isn't like they can magically transmogrify materials into existence.

Maybe that's why your squadmated only trust Shepard with Medi-gels. And yeah, ME2 does explain and show that about the dispensers that you mention it.
