Baaaaaaaaaaaaaaaad idea. Seems I'll have to restart and go as an Infiltrator. More than 20 tries on any particular mission is excessive for me personally. In the words of Bush Sr.....Not gonna do it.

The more I play, the less that last ME2 achievement looks worthwhile, lol.

How are you playing/speccing your Sentinel? Are you playing a new game, or is this New Game+ (new game with an imported ME2 character?)

For Sentinel, you want Assault Armor for the shields on armor detonation, and Guardian passive for the extra recharge speed. You will want to complete Archangel's' recruitment mission and Kasumi's loyalty mission (Stolen Memory DLC) as soon as possible to get the tech recharge upgrade as soon as possible.

New Game is easier than New Game+. Enemies scale with Shepard's level, so on New Game+, enemies are at their strongest while you have no upgrades.

Also, what mission did you have trouble with? Some missions can be more difficult than others. I recommend you search YouTube or look at some of the threads in the ME2 Gameplay Build and Strategy forum for videos and tips.

New Game with a ME1 import. Running Power Armor/Guardian for recharge. Full Kestrel set for shield bump. Taking Miranda (team health boost) and have tried it with Garrus/Mordin/Grunt so far, unsuccesfully. Biggest issue is getting knocked out of cover by Harbingers biotics or the Scions. Try to move back and keep myself away from Harbinger's biotics and then get snipped from the side.

Using the Arc Cannon I'm able to clear the first wave of Collectors (though not always, perhaps 40% of the time) but then quickly fall prey to the second. I think my biggest issue is I'm too low level (17). I'm planning on going back and trying to level up before attempting again but keep having the missions forced on me before I have the time. I didn't properly plan for this pre-Horizon.

I'm going to try and not take Grunt out of his tank, complete LotSB, Overlord, and Garrus's loyalty missions, which should make it much easier. Question is, does the 5 mission trigger count even if I keep my squad at 7 or less (by not waking Grunt up)? If it does, should be ok, if not I'll have to roll back to before Horizon...and I may honestly just shelve the game and play Skyrim if I have to do that.....

Your biggest problem right now is that you get the Reassign Powers research upgrade after Horizon, not before. Power Armor is actually a bad choice since it gives you less survivability than Assault Armor, and the extra power damage is not really needed.

Power Armor gives you +100% of base shields, but once it breaks, you are down to health only.
Assault Armor gives you +75% of base shields, but when it breaks, it gives you +50% of base shields, plus a larger detonation radius. So essentially Assault Armor gives you +125% of base shields before you are down to health. Plus the larger detonation radius means you can stagger more enemies.

If you can mod with Gibbed save editor, you may be able to reset your talent points so you can give yourself Assault Armor instead.

Your level does not matter too much since you have enough for Guardian and max Tech Armor.

Horizon is triggered once you have recurited Mordin, Jack, Garrus, and Grunt (do not have to wake him). LotSB only becomes available after Horizon. The 5 mission trigger count is only for triggering the Disabled Collector Ship mission, and yes you need 8 squadmates to trigger it.

I recommend searching YouTube with the phrase "mass effect 2 sentinel horizon" and see how other people managed to complete it.

If you can, maybe change your bonus power to even 1-point Neural Shock, Slam, or Stasis, since they are "1 point wonders." Stasis is good for the Scions. And if you time it right, enemies falling out of Stasis can take extreme amounts of damage, so you can try to exploit that.

A few notes:

After Horizon, you can actually do 6 missions before the collector ship. The key is not getting back on the Normandy after the 5th mission. So, do all 3 recruitment missions. (These take you back to the Normandy.) Now you can do some loyalty missions. The loyalty missions on Tuchanka and Illium do not take you back to the Normandy, which means you can do one mission, then Grunt's and Mordin's mission back to back, or do Miranda's mission and then LotSB. My preference is to do Grunt's mission to get the Fortak discount, then head to Illium to do Miranda's mission followed immediately by LotSB. Voila, 6 missions instead of 5. Plus I get the 3rd damage reduction upgrade meaning I can research hard shields.

I found stasis to be a great power for my adept. Just immobilize the most threatening enemy and then work on taking out the minions. Depending on how you leveled Kasumi, her flashbangs could be of assistance since they can stop even Harbinger from being able to fire.

Personally, I don't like how they did hardcore and insanity in ME2. I don't like the idea of changing the rules of the game (Calvinball), especially when it totally nerf's an entire class of powers. I much prefer how they did things in ME3 when it comes to difficulty.

Rolled back to just after Horizon. Doing Overlord now, heading to Illium next to crank out Miranda's loyalty mission, recruit Thane, and end with LotSB. That should technically give me enough missions to go to the Citadel and do Garrus's loyalty mission too. We'll see what happens.

As far as tactics, did some reading and apparently moving left and right behind cover when Harbinger uses his "Slow Orb" biotics helps to prevent you from being thrown out of cover, which was my biggest issue.  The Scions and others I can handle as long as I'm not getting thrown out of cover every 3 seconds.

Just finished the Collector Vessel mission. Assault Armor and level 22 made it much easier. Went with the Cain, killed the first Scion before his platform landed and that made the waves much much easier. Took Mordin and Miranda with Warp/Throw and Squad Warp ammo. Thanks for all the advice! :-).
