DAO: Female human rogue (dual wielder ftw!)
DA2: Female human rogue (Not related to my Warden at all, but I think I see a pattern developing...)
DAI: Probably a female human rogue.
In DAO, I'm currently trying to do a female Dalish elf warrior playthrough... but I'm not really enjoying it. And I tried to do a female human mage... but didn't really enjoy it, either. It's weird because in my tabletop D&D games, I used to always love playing elves and have often played classes with at least some magical component to them (eg. bard, ranger, sorcerer). In Dragon Age, though, I prefer humans.
I have selected rogues for the past two games because I like being able to pick locks even before there is a rogue companion in my party. Also, I really enjoyed backstabbing enemies while a warrior took them front-on... This made Alistair's end-of-battle comment "I think we work well together" extra cute. I also liked using stealth to get behind enemy mages and attack them before letting the rest of my party move freely... Being struck by fireballs and other area-effect spells was a far less frequent event for my companions, as a result.
Perhaps, with the new Class Exploration Skills Toolkits, I'll be able to open locks right from the get-go even if I'm not a rogue, in which case I might be more willing to give a different class a try.
My very first DAO (female human rogue) playthrough is probably going to be my canon one, although lately, I wish I had given her a less Orlesian-sounding name, so I actually did start another human noble female playthrough with a more Celtic name in preparation for Inquisition. I'm planning to make all the same major plot decisions (until I get to Awakening... then things will change*), but couldn't get her appearance as nice as my first Warden's. So now I'm trying to figure out if I can edit the save files to swap appearance or name somehow or whether I ought to leave well enough alone.
* I recently read The Calling and think I'll change my decision about the Architect based on new information gleaned from the book.

I think my first character was a male Dalish rogue named Bael, though I never finished the play through before making a male human blood mage named Jaso Amell. The blood mage I consider my primary story thread between the games. In DA2 my first was a smart mouthed rogue named Hadrian.

My first ever character was a human female mage, but I never finished that character.
My "canon" imports are a female City Elf rogue (dw) who did the US and was in Mass Effect terms a pure paragon.
Then I have a male human mage. This was a speedrun pro-mage playthrough including the Dark Ritual just to have max magic activity in the further games, and so that my Hawke can brag about being related to the Hero of Ferelden. He was about 70-30 percent Renegade. Although he was not a blood mage he willingly sacrificed Isolde, for instance. In DA2 my mage import will be a full-blooded blood mage, so to speak, to see the full consequences of magic gone wild.
My last is a male Dalish elf archer who was about 50-50 renegade and paragon. He did most of the things that the other two didn't just to have some variety. He's also the only one I have played through Awakening with.
If I can be bothered to pick up Origins again, I am planning to do a Human noble who becomes king/queen since I've never done that before.

It wasn't until DA:O that I found a game in which playing a healer was redundant so naturally my first character was a female mage. She romanced Alistair and then, when he dumped her to assume the throne, decided to feed herself to the Archdemon in a blaze of glory. (Hardening? What's that?)
Naturally, she brought him along. As she spared him the DR (because, really, how does it not sound like a bad idea?) he took the final blow despite my vehement protests and hooked me on DA for life. The feels!
My "canon" Warden, however, is my female Aeducan. I wasn't a huge fan of the dwarf commoner origin and didn't expect to connect so much with the noble dwarf but I played her as a woman used to getting her own way and never taking no for an answer. She put Alistair on the throne and stayed by his side (and in his bed).
My favorite Hawke was my archer. Varric, Sebastian, and I wreaked havoc all over Kirkwall and its surroundings, dragging Anders along for an all-ranged dodge-a-thon. She was, naturally, snarky as hell, though she couldn't quite bring herself to use that line to Dumar while he was holding Seamus's body. She had some tact.
My first Inquisitor will be a rogue, probably dual-wielding, and likely a dwarf. It rather depends on what the backgrounds are like.

DA:O Teehan - An academic human male Circle mage that saw himself thrown into the middle of a war for helping his liar buddy. He was a specialist in force field magic, and I imagine he studied some force mage stuff after DA:A. He romanced Morrigan, fell dramatically in love with her in spite of their different perspective on magic, went along with the dark ritual, and then into the looking-glass with her when he found her again.
DA2: Alithon (my avatar pic) - A male melee rogue. He was a low-scale smuggler in Lothering when he found himself in charge of his family and running away from a Blight. He became more and more responsible in Kirkwall, partly due to his friendship with Aveline and his family tragedies. He developed a cute relationship with Merrill after a short flame with Isabella, and together with Grey Warden Bethany and all of his allies (including Fenris and Anders) he defended the Circle against the templars and Meredith.
For DAI maybe I'll try first a fighter, this time. Most likely a human, I like the feeling of exploring the otherness and exoticism of Thedas through the eyes of a human PC.

My first ever playthrough was a female Dalish Rogue, who romanced Leliana, had a rather grey set of morals, was an extremely patriotic Dalish, and died killing the Archdemon.
I've since redone her. Essentially the exact same character but with less dying killing the Archdemon and more stylish hair.

My first DA2 character was a female warrior named Libby. This was before I realized that if you started a romance with one of the characters and then slept with someone else, you'd end the first romance. So she ended up with Anders as opposed to Isabela. Sigh.

My first was a human noble, only played half of the game with her though. Then I played as a female City elf named Kaira and she was nice to everyone, sweet, but shy at the same time. She romances Zevran. I've always stuck with her. I may just play different versions of her through other playthroughs.

My first playthrough was a long time ago with a female Dalish elf rogue. Then I bought my PS3 and started again with the exact same origin, only with a different name. She romanced Leliana and her save will be the first one I'll import to Inquisition. I'm currently doing a run in Awakening and will do Witch Hunt, then I can start my DA2 playthrough!
In DA2 I'm thinking of a female rogue sarcastic or diplomatic Hawke, romancing either Fenris or Sebastian. And finally in DA3, a female mage elf.
I'm also thinking of carrying over my Dwarf Noble save once it's also been completed (I've fallen in love with the origin) and will do a mage Hawke/rogue human Inquistor chain afterwards.
In DA2 I'm thinking of a female rogue sarcastic or diplomatic Hawke, romancing either Fenris or Sebastian. And finally in DA3, a female mage elf.
