well, i agree that a Tal-Vashoth would be nice (you could discuss the Qun with him, without him/her defending it (like Sten and Talis) and learn more about the Qunari-People etc.)
as for the Qunari as a whole:
yeah, they are borg (without cybernetic-implants) that have assimilated communism and now seek to spread it to all the "heathens"...i don't like them and i would love to fight them on a grander scale (throwing them of their island and if they try to go "home" afterwards, i want to follow them, as i want to know if they themselves are only outcasts of a much larger society (rebells, exiled/banished people))
as for "lost content" - well, if i they would cut another companion, it would depend on the who and what (who is it (meaning: Name, Age, Organisation + Background) and what is he/she (class)?) - if they cut some noble with a boring backstory for example (like a Chevalier - i don't like those all that much) then i would love it (!) but if they cut someone i would think is interesting (mage characters (not counting Anders...at least not after DA2...in Awakening he was ok) are normally interesting (at least for me) or rogues (most of those have wounderfull backstories like Leliana (as much as i hate her chantry-love), Isabela, Zevran and Varric

Well we already know of a potential companion anyway, as hinted by the trailers of the ox man. Unless they're completely different from the Qunari. I could be wrong.

Makes sense, though, I am curious to see what other people chose when it comes to various choices. I don't doubt it would be fairly popular too. I could be wrong.

"Filling in the gaps" is an important part of roleplay, and with elves, dwarves and humans things you assume about their environments and cultures are unlikely to be contradicted because they are purposefully familiar. It's the reason they are elves and dwarves and not some invented race, and the reason different regions have an adopted real world culture. We know much about Orlais purely from the accent.
The Qunari on the other hand are intended to be alien. We've explored, through characters much about their way of life, but mostly to illustrate how strange it is. I don't believe we've been given enough that we can fill in the gaps without a huge likelihood of being contradicted by future information. And that's a problem.
Perhaps as we become more familiar it will become feasible, but I think the air of mystery is an important part of what they are and represent.

I wouldn't really say we're unfamiliar. At least those of us who've read the books, etc. I really see them as people with rigid customs not intended to change. But that's the Qun ideal, not the Kossith themselves.
Plus as pointed out by another person, we know where the writers inspiration came from as well.
