From what I understand in Mass Effect 1 aside from the citadel we were exploring mostly human colonies in the attican traverse which is where Saren was about. This is why Shepard was made a spectre to go where the Citadel fleet could not. Humans were the ones who wanted to colonise this area which pissed off the Batarians. The citadel hasnt colonised the attican traverse cos it was right next to the terminus systems and therefore suceptible to raids by pirates etc....
Shouldnt Humans Be More Rare Outside Citadel Space?

We saw an absolutely miniscule portion of the Citadel in the first game.
this is a good point.

Humans are good and evil, just like Turians as well, they make great warrior so they're hired out easily.
I'm glad the Warden of Purgatory is Turian, cause having him human would have been pushing it.

Couple quick points.
1) thread title shouldn't contain "outside citadel space" We only left Citadel space once.
2) We had Mass Effect technology long before first contact. The First Contact war was started because turian ships saw some of our ships trying to activate a mass relay.
3) As human we are far more impatient/ driven/ entrepreneurial/curious/ some other motivating factor than many other species therefore creating a drive to go to the Citadel, rapidly found colonies, create new criminal organizations, etc. The iprovement in the standard of living brought on by new technology, FTL travel, increases in resources brought about by colonization would allow for a massive flux in population.
4)We kick ass
If I think of other good ones I'll post them.

I think we had Mass Effect technology only 20 - 30 years before the First Contact War (gotta admit I'm too lasy to check). That really is not a long time.
I do appreciate that it stated that we would have been destroyed by the Turians had the Council not stepped in.

Even with only 20 years before hand Mass Effect technology would have allowed for a large increase in population.

Here is my theory.
The citadel is mentioned as being one of the most expensive places to live in Citadel space. Humans however have a culture rooted in entrepreneurism and thus likely flourished in the intergalactic business world. The turians are not mercantile and have more of a cast based government while the Asari are more ecclesiastical. The Salarians are liberal but their talents are more devoted towards science rather than economic growth.
Therefore, I believe humans are common on the citadel since their race can afford to live there due to the economic successes humans experienced when they became a spacefaring species.
This is likely the reason for their fast expansion.

That would mean the Volus would own half the station - since they invented the Galactic Economy.

20-30 years is a long time, look at technological advances from 20 years ago to now. Now imagine getting blueprints for all new technology without having to originally think of something new and trying to make it.
Before First Contact, we colonized our entire system and set up space stations. Also, there is controversy as to how long governments knew about the cache on Mars before releasing it to the public. Only when we decided to try to use the Mass Relay did we run into the Turians and first contact. After that, it was like countries trying to get into the EU, getting some help from the already established nations to be about on par with the rest.

In my opinion, a good deal less than 1% of the citadel was actually seen in the first game. Remember when Shepard & co. look out the window to comment how bloody massive the Citadel is? The explorable area in ME1 was probably the size of a single apartment building in put to scale in a modern city.
I liken the areas we were able to travel in ME1 to the city block a nation's major political forum is (White House in the U.S., Parliament in Canada etc.). Sure, there's an argument for saying you've seen the most -important- area of the given city, but to base your impressions of that city off that single block is ludicrous. Let us also not forget that the Citadel is more akin to a nation than a single city.
Perhaps there was an over-abundance of Humans on the Citadel based on what we saw, but I explained that to myself by saying that seeing as only 30 years have passed since first contact was even established, humanity is still slightly in awe of the brave new world so recently opened to them, I mean realistically most humans in the ME universe have probably never seen an Asari or Salarian in the flesh (I justify this through the idea that the largest portion of humanity is most likely still on Earth). As for the abundance of humans in the colonies... It's stated at one point that colonies mostly just consist of a city, or large town in reality. Who's to say for example that there wasn't another alien colony on the opposite hemisphere of Feros? Lastly, it may not be unreasonable to assume that Turians, Asari, and Salarians have largely given up on the colonization of worlds and are instead focused on further developing those planets already claimed...
There are several billion people on Earth, and despite all the issue we're facing today, I honestly don't believe we're in any -immediate- danger of being wiped out (begin flame war). Feros has like, what? 100 people at its peak? Maybe 200 from the look of things?
Wow, went on a lot longer than I meant to...

The Volus's biology restrict them to their pressure/environmental suits so I'm sure Volus are comfortable only in areas of the Citadel which are specially designed for them and only travel outside of them when necessary.

You spend most of ME 1 buzzing around the Attican Traverse and the Skyllian Verge, both of which are space regions colonized by humans. It makes sense that we're what you encounter most of the time.
Anyway, let's all hope the salarians don't see this and start cooking up an anti-human genophage...
