Who did you romance or was your favorite to romance? Did you romance them through all 3/2/1 game(s)?
ME1: Noone
ME2: Miranda
ME3: Miranda
The miranda romance I think brings more depth to the romance than that you get with any other character. SInce Miranda has her own problems with being perfect and with her father. I also think it's a sad story when you read that Miranda, because of her genetic motification, cannot conceive a child. (It's in her Shadow Broker Dossier in Mass Effect 2)
So who did you romance and was your favorite to romance?
Best to Romance?

I romanced: Miranda
Favorite: Miranda
My canon goes Ashley --> Miranda --> staying loyal to Miranda.
Honestly, I think that Miranda's romance is certainly the most real of the main cast, and has the most organic flow. She starts out skeptical of Shepard (even outright hostile), but she eventually opens up to him as they work together. Later on, she finds herself in need and asks Shepard to help rescue her sister. Seeing Shepard go out of his way to help her save Oriana (without asking for anything in return), Miranda learns that she can trust Shepard on a personal level. Eventually, Shepard cracks open her icy facade and figures out that Moranda is actually quite warm and loving to those to earn her friendship and respect.
Acknowledging that Shepard is one of the very few people who is on her level, Shepard intrigues Miranda. Despite being "normal", Shepard is still capable of doing things that even Miranda herself is incapable of doing. She is both envious of this and admires it in Shepard. Through Shepard, Miranda finds that her accomplishments ARE her own, in spite of her gifts. Shepard himself is a testament to this. Truly, Shepard (mine, at least, the way I RP him) considers his death to be the best thing that's happened to him, because it led to him meeting Miranda.
Miranda eventually finds herself falling for Shepard, and at first dismisses it as "blowing off steam" before a big suicide mission, but comes to realize that her feelings are genuine, and that Shepard is the first person she's felt this way for.
Of all the romances, I would say that Miranda's is the most rewarding. I love the development of her character along the romance path in 2 (it was kind of dumbed down and retread in 3 though), and her romance content in the Citadel DLC is fantastic.:

male Shepard with feelings for Kaidan in ME1, heartbroken & lonely in ME2, romancing Kaidan in ME3
I also have saves with the gender swap so one can romance Kaidan in ME1 with a male Shep, but in hindsight I prefer to go it the normal way.

I like Kaiden the most, but I don't really want my Shepard to commit. In my last playthrough I killed him and went for Liara, Jacob and Javik, lol
If I ever decide to do a playthrough again it'll be him, Thane, and Javik

Due to my content loving nature I am familiar with all of them. Most I played myself but four I looked online instead (Jacob, because he is infamous and I didn't want to waste playtime. Garrus, because he is my bro. Steve, because he was mourning and it felt invasive. And Traynor because my only single femShep was staying such to see if there was a female version to Anderson's 'Shepard dad' speech).
EDIT: oh there is Vega in Citadel which I also just watched online. Talk about rapey. Harrass him when he is obvious uncomfortable, pressure him to provide goals to make it happen, get him really drunk, pressure him AGAIN... Egads, poor guy.
As far as I'm concerned the wealth of content for Kaidash - whichever survived to 3 - was probably the 'main'. I would have said Liara too if she didn't go all cold and distant in 3 for some reason. All that use of 'friend' made me wonder if she was tryin to hint a brakeup sometimes...
Fave femShep: Kaidan sustained
Fave broShep: Jack ( actual romance with just the hug, not the We'll Bang Okay one) - got some great dialogue in 3 as well!

Femshep/Liara the whole way through. In principle, I'd have been fine romancing Kelly or Samantha, but Liara's the one who's been around since the beginning and I refuse to cheat on her.
As an aside, Kelly is the romance that I believe is the most realistic.

Liara
I think she has the most complete romance arc and the best overall (with LotSB). The evolution of the character really makes the relationship evolve in a very unique way. They have experienced their ups and downs, which makes the romance more meaningful imo.
The chemistry between Jennifer Hale and Ali Hillis is also fantastic, and it improves the emotional and romantic tone of the relationship to an even greater extent.

For my male Shepards I flit between Tali, which feels creey as she is far too much a little sister personality, and Jack. The latter who gets so much better character progression if you are playing as a male Shepard.
-
When playing as a female Shepard I do tend to favour Liara, as I like her character and she is the most rounded of the romances. I've tried a Kaidan romance but it is a little dull, I like the character but there is no fire in it.
Otherwise I go for Thane. He's the only one who can tempt my female Shepards away from Liara.

ME1: Liara
ME2: Miranda
LotSB: Liara (played after the Suicide Mission)
ME3: Liara
I think Liara has the best romance arc of the female LIs, and it spans all three games if you include the LotSB DLC. She is the only LI through all three games that has scenes where Shepard can let down his/her guard and voice private fears or doubts. Those scenes serve to make Shepard feel more human, and they are a large part of the reason why I like Liara's arc. She feels like an equal, rather than a subordinate. Her morality, personality, and political views were also a good match for my pro-Alliance, pro-Council paragade. And with the 'Name in the Stars' and farewell gift scenes, she has also two of my favorite scenes of the series.
If I can be shallow for a moment, it also didn't hurt that along with Miranda she is IMO the most attractive of the potential LIs.

I generally prefer Liara's if you look at the whole trilogy. The only ME2 "romance" I care about is really Samara's.

depends.
Content-wise is Liara all the way.
Otherwise it is up to you, the player, to determine that.

My main Shepard is a renegade femShep and she was faithful to Liara for all three games.
My paragon Shepard romanced Ashley in ME1, Tali in ME2 and stayed with Tali in ME3 I recall.

Liara all three games, for my femshep and by far my favorite. For pretty much the reasons Han Shot First all ready listed. She really brought about a sense of balance when it came to my more renegade-ish femshep - and after ME2 LOTSB, there was an equality and loyalty between her and shep that just makes me go "woa" every time. Shes a perfect match for my canon commander.

Whoever is the best fit for the Shepard you're roleplaying. My canon was Colonist/Ruthless/Paragade, None-Tali-Tali, High-EMS Destroy.

Destroy: Jack/Ashley
Control: Liara
Synthesis: Miranda (romance death)/Thane (synthesis is a lot easier to accept when you have nothing to live for except revenge)

Only rivaled by Diana Allers, whose deep and emotional romance in ME3 rivals Shakespeare's Romeo and Juliet. Truly masterful writing...
