Well fun as the David roast is , I think that the reaper plot is an inextricable component of the Mass Effect story. The trilogy would likely have suffered even more without it.

I think just the general idea of a triple A sci-fi Bioware RPG is a good idea, period. The plot never mattered all that much. The setting does.
