BioWare has set that precedent a long time ago. No need to mention it. Now if you were talking about 'The witcher'.....
If we're talking to old fans, then yeah that's the precedent, but conferences like that are supposed to be selling points for NEW consumers. Why leave out one thing that can be a deciding factor in whether or not a gamer buys something, especially something as important as gender coice?

He could have not mentioned for a number of reasons. I'll go ahead and list them in least likely to most likely for you.
Least Likely - in order to have race selection for Dragon Age 3 they had to drop gender choice in character creation. Sacrifices must be made after all.
Likely - The developer never considered playing as a woman and probably doesn't play as women in RPGs, thus, the idea of mentioning the gender option never crossed his mind.
Most Likely - It's ****ing BioWare. You get your choice of genitalia. Even for "new consumers" it's practically known universally through osmosis.
re: the bold, not necessarily. I'm a fan of the Mass Effect series, but I had no idea you could play as a female Shepard until I actually started the game, because every single promo I saw for it was for the default male Shepard. I had been iffy on playing it until that point, but if I'd known that I could play a female PC, I probably would've bought it sooner.
For a lot of players, choice in a customizable PC matters, especially in regards to playing male or female, so to leave that out at a conference geared towards enticing people to buy is a weird oversight when talking specifically about choice of customization.
