i ended up using salves a lot less through each play through when i got better at giving commands to each companion but i had them for tough fights and emergencies.
poisons and bombs were very useful, and as i almost always play rogues (even in subsequent play throughs) it's more "in character" for me to use all the tools available to me to get the fight done fast and move on rather than making things more difficult for myself for the sake of a "challenge".

I never gave them a fair shot in 2 because of the first game. Generally speaking I doubt I'll be using them in DAI either.

Grenades I used a little bit, but again mostly in Origins. Too expensive in DA2. Salves, only for dragon fights.
One thing I sorely missed in DA2, though, was traps. I loved setting traps in Origins and was constantly running out of shrapnel.

I never used them, and I never used traps either. To be honest, I forgot until this thread that they were even in the DA games.

Yes to the poison and grenade part. My "canon" character loved poisons, so it was a roleplaying experience.

In DA2 I usually forget they're there, just because of how the crafting/resource system works.
Also I tend to play mages, which means most things that can be done with grenades and traps and such can also potentially be done with a spell.

That's my answer is well, though I'd add that grenades and salves were uncessary in DA:O regardless of difficulty.

I can understand the consumables might be useful for nightmare difficulty but on hard and below it really wasn't worth the extra micromanagement.
Not sure what to do about salves... put them on your armor...? But I am sure something could be done to make them more rewarding to use.

This pretty much for me.
Used to craft stuff all the time when I picked up stuff in the field in Origins. That would remind me that I had them and I would use them all the time. Sometimes right after I crafted it.
