Working through my upteenth playthrough of the entire series and MAN, the one thing I can say that's inequivocally better about ME1 is the ability to toggle aiming assistance. Both ME2 and 3 are brutal when stuff starts getting hairy and the game wants to select my targets for me. Why this feature wasn't continued from ME1, I'll never know.
