From the leaked survey it sounds like the Iron Bull is a baller. He loves to drink, party, and have fun. I can't imagine the in-game companion will be too different from that as it'll likely be subverting expectations exactly like BioWare likes to do (thinking of Shale in this instance).

Sten is a real deadpan, snarky guy. He was screwing with Morrigan when he was describing the Qunari "act." More or less to get her off his back.
Despite some people not getting it, Sten had a sense of humour. It was, however, more dry than my dead grandmother's bones.
