They're called Qunari.
Its an ethnoreligious term, sort of like the word Jewish. Whether or not the word refers to an ethnic group or a religion depends on the context in which it is used.
The humans of Thedas also refer to ethnic Qunari as Oxmen, but since that is comparing them to beasts I'm guessing the term is supposed to be derogatory. I'm not sure where Kossith came from, as I only remember seeing it on the BSN and had to ask what it meant the first time I saw it.
