Apparently certain classes and companions will be able to open up new entrance points and areas to explore by using certain skills, however if the portcullises in the Dragon Age universe are so weak that they can be bashed down by a woman with her shield then what is stoping a mage from knocking it down with a fireball or a rogue dissolving it with their spit?

For starters, rogues don't have acid-spit. WTF game are you playing?
Second, it's obviously an arbitrary distinction designed to encourage players to experiment with all of the classes. And I approve heartily.

Well I guess it doesn't HAVE to be acid spit, just the force of the spit hitting the gate alone looks about enough to knock it down.

They mentioned that it takes speccing a warrior especially for that, in some sense we don't know yet. So it isn't like an entry-level warrior can do that.

Well depends on how high is the woman's strength stat.
That said I'm more bothered by the fact that the door shattered than by who was the one shattering it.
You need very low temperatures to have a metal bar break like that and I don't remember seeing Vivienne casting a spell on the door.
I think that sending your warrior to bash the portcullis should result in a bend door unless, as said above, you combine it with a freeze spell.
Another alternative could be using some bombs, or using your rogue to climb up the wall and open the door from the inside.
The fireball could result in a melt down door, for example.
The shattered portcullis looked silly to me.
