Right, I've only just started exploring the castle for the first time, try not to spoil anything. I'm just wondering why the walking corpses here, aswell as the ones who attacked the village don't count toward my "Demons & Undead Killed" statistic? They don't seem to count as, well, anything...just kills for individual party members?

It's quite possibly a bug they didn't catch. I mean, how many people would be eager to test that? I played two characters who would but for their obligation to take out threats worse than they were be outright villains, and I still didn't have the guts to do this.

I think he misinterpreted your question. Trying not to spoil, at Redcliffe you have a less moral option than defending the town, and I think he thought you were doing that.
Them not counting towards undead/demons is probably just an oversight. Weren't added to the correct lists etc.

Aha...hmm ok, but that sucks. Who would actually abandon this village and the all the xp/loot? Even a villianous character would save the village for the potential treasure alone.
This is a common bug, then? I know this isn't exacly a serious issue, but you think there could be some way to hack the statistics and add the extra Undead? I love stats...following your kills is fun!
