Edit: I also have no idea who Jules Winfield is, so somebody else answer that, please. I can't make an uninformed decision, you understand.

[edit] Jules Winfield is Samuel L. Jackson's character in Pulp Fiction. Check out YouTube for a more informed answer.

A spell that makes things weightless. Watch your enemies rise into the air or become pinned to the ceiling of dungeons.

Meeting Yavana from The Silent Grove if Alistair isn't king.
Edit: Lol my answer was meant to go with Regan's but I think it still fits well with Pantsthief's.

Also having every piece of armour be so gaudy and colourful no matter how you try and fix it, you'll always look like a rainbow pimp.

Riding a dragon instead of a horse.

Also playing as Tyrion Lannister.

Yes. Why not. Some of Thedas's cultures might be similar to ancient Rome. Plus the Celts used wooden chariots. Maybe the Dalish have some made out of Ironbark.
To pirate hats:
Sure, since there are pirates in Thedas.
To Tyrion Lannister:
No, not as Tyrion (obviously). But should there be a dwaf like him? Sure! He's awesome.

And then all of your companions are like, "OOOOOoooooh! What is that? Can it be ...? No. YES! It is."
The ability to use some spells outside of combat. To reveal hidden doors, for example; or to Jedi mind trick people during conversations.
