Yes. Why not. Some of Thedas's cultures might be similar to ancient Rome. Plus the Celts used wooden chariots. Maybe the Dalish have some made out of Ironbark.

To pirate hats:

Sure, since there are pirates in Thedas.

To Tyrion Lannister:

No, not as Tyrion (obviously). But should there be a dwaf like him? Sure! He's awesome.

Companions that walk around and do stuff while at base/in camp and don't just stand in one spot.

This is one of my very biggest hopes for DA:I, actually. The devil is in the details ;)

Finding the griffons haven't actually died out. A colony of them living in the mountains somewhere.

Yes. As a dragon attacks you in the mountains, a griffon should swoop down, claw at the dragon's eyes, and scare it away.

And then all of your companions are like, "OOOOOoooooh! What is that? Can it be ...? No. YES! It is."

The ability to use some spells outside of combat. To reveal hidden doors, for example; or to Jedi mind trick people during conversations.
