Why would Organics forgive the Reapers if you choose Synthesis?

That's up for each and everyone to decide for themselves. Some may some may not if they learn the truth.

I think a lot of the frustration from people was that it didn't feel personal enough, which is why somepeopel wanted a bossfight, but then they are told the true evil can't be fought and can't be shot.... You have to kill it in a different indirect way.
Also, the enemy was the one with all the answers. You had to do it on the terms provided by the one true enemy.

As for boss fights, we've been there and done that, and we did come kind of close with the targeting laser on Rannoch. I did kind of hope that there was some kind of resistence. I guess even he was a little fed up, and accepted his own demise.

To be fair, there's no way that other people would know that they're pawns, unless Shepard lives to tell the tale afterward, in which case they'd be dead.
I don't really care what people know or think. The threat is ended...
In synthesis, I guess they could access the knowledge and experiences of the Reapers, if they trust it or not would yet again be for each and everyone to decide.
But if you look at worldwar two the top leadership ofthe nazzzi party was killed of and imprisoned, most of the people and soldiers were free to return to their normal pre war lives and atempt to rebuild what they once had and hope for a future. People will be tired of conflit and welcome a peace even if they might not like their new neighbours. Eventualy new genration wont think about it quite as mcuh, it will likely be hardest for the Asari who might spend a milenia shivering and worrying abotu the giant robotic spaceships with sludgified people in them.
Posttraumatic stress associated with Reapers would be the biggest issue.
Now give me a new mass effect game with a different story please. I'm hoping it's a good one and perhap that they learned a thing or two.
There is no point hoping for a bad game.

For the same reason the quarians forgive the geth for years of slaughter (after you broker peace on Rannoch).
Games move time forward unrealistically fast and idealize certain things. Still, the precedent was set.
How many years for the Quarians? Over 250 years.

Mind control is implied in the ending, to call it a theory is being untruthful.

Destruction is the only option that allows us to choose what we want to do in the end and don't forget that all of this is on the premise that the ancient ones were right about all of those. Shepard proved they were wrong, so to me Destruction was the only real option. Whatever comes next is our choice as are the consequences. The ancients actually feared the extinction of organic life, but as it has never become fully extinct, how could they be sure it would?
Or perhaps they didn't fear extinction of organics but newer races becoming too powerful and it was their own demise they feared?

The only thing the Leviathans were afraid of was that their supply of slaves might run out.

Even when the Geth took over Rannoch, they didn't go hunting down the remaining Quarians.
That's probably exactly what they did. They let a small group flee and we never found out what happened to the other hundreds of millions of Quarians on Rannoch...

It was 300. Cultural genocide and near complete extinction however aren't easily forgiven.

The Geth haven't really proven anything to the Quarian masses. Most are still brainwashed by centuries of anti-Geth propaganda. If history tells us anything, the full removal of a mass racist mentality is not and cannot be a smooth transition.
Admiral Gerrel's motivation for standing down in the peace scenario were probably tactical. Anything else is OOC.
With that said, it's even less believable that there is peace between the organics and Reapers. Maybe it's brainwashing/indoctrination. Maybe it's new found perspective through there integration with technology.
Mass racist? Anti-Geth propaganda? The Quarians were butchered by the Geth, only a small percentage could flee. The Quarians have every right to hate the Geth. Sure, their government started the conflict, but that doesn't justify anything the Geth did in the Morning War.

If you believe the records inside the geth server, the Quarians are at fault for the war. They feared the geth the moment they started showing signs of self-awareness and started questioning commands that didn't make sense to them. It's the Quarians' fear that caused them to want to shut down the geth and they resisted. And as such a war was born. When the Quarians ran away as they were losing, the geth let them go as they were unsure of their network's reach and consolidated instead. In essence the geth only fought against their creators, because their creators wanted to exterminate them, the minute the geth became sentient.
What would you do if you became self-aware and your creator feared you so much, that he wanted to shut you down? Would you take it lying down?
I still destroyed the geth in the end because they would wipe out the Quarians by choice, proving they were no better than anyone else. Why choose Quarians over Geth? Well, the Geth did more than attack Quarians and Tali is part of my crew. So what gives me the right? Nothing, but I had the choice and a choice had to be made. So I did.

Alas, the message of mass racism and anti-geth propaganda is what the writer are actually spreading.

The quarians are shown at every turn to be too stupid to know when to quit (e.g. If you side with the geth, they will keep fighting knowing that they will all die); combine that with the fact the quarians are blatantly violating the laws of war (by having civilians on warships and arming civilian vessels) I am much more inclined to believe that the morning war was simply yet another preventable disaster caused by quarian stupidity 99% of quarians were killed because the quarians were too stupid to retreat when it became clear that they were losing; when they finally did retreat the geth left them alone.Sure, their government started the conflict, but that doesn't justify anything the Geth did in the Morning War.
