In the interest of time, just three from ole H...

3.) "You can't predict how people will act, Garrus. But you can control how you'll respond. In the end, that's what really matters."
- Shepard.

Not sure I entirely agree with the first sentence, but that's beside the point. In the end, you're responsible for (and only for) your own actions. Keep a level-head. Don't let others control you. Don't try to control others. This is very true.

2.) "I'm not really a by-the-book kind of guy, and I ****** people off. My family has been military since the Unification War. War is my life. It's in my bones. But that kind of passion is... deceptive. It can make you seem reckless, when you're anything but."
- Primarch Victus on his leadership experience.

This man gets it. First person in the series, aside from maybe Hackett, who gets it.

Victus does not see himself fit to be a diplomat because in politics, public opinion drives policy. He knows from experience that sometimes the best decisions are not always the popular ones, and sometimes they are ones that people will judge you for very harshly. I much prefer his character to our defacto mentor, Anderson... who is merely a cheerleader for Shepard. Victus actually demonstrates how good people with important responbilities (like him, like Shep) are challenged with adversity.

1.) *Mordin singing 'Scientist Salarian' in Shroud tower.*

Godspeed, you magnificent bastard.

Oh dude you really nailed this question on the head, great answers! *virtual high five*

Victus was easily one of the best parts of ME3. The dude has his priorities in order, it's why he wanted to stay behind with his men on Palavan, but it's also why he decided to leave with Shepard. Imagine the weight he carries around with him all day.
As for Mordin, I will remember that magnificent little frog until the day I die, his redemption was epic.

"I won't let fear compromise who I am." - Shepard, Collector Base.

"You exist because we allow it. You will end because we demand it." - Reaper on Rannoch (?), maybe Sovereign. Can't remember where I heard it.

"Stand in the ashes of a trillion dead souls, and ask them if honor matters... the silence is your answer." - Javik

"Let old ghosts rest." - Shepard, talking to Javik and agreeing that reliving those memories would suck.

Tali: So you're a real living prothean?
Javik: As opposed to a fake dead one?
-silence-
Tali: Uh... okay.

Not a quote, but makes me chuckle :P

I'm loving all the Sovereign love, he was exactly what a Reaper should be.

An honorable mention has to go to the renegade interrupt to the Reaper on Rannoch.
"Tell your friends we're coming for them" *orbital strike*

This was indeed the most badass renegade interrupt in ME.
Runner up is "Wrong Answer" and shoving the Eclipse Merc out the window.

Best quote however is:
Anderson: "You know, I was born in London"
Shepard: "Really?"

"We don't have time to deal with this idiot, CHARGE!"

This is my most memorable quote from ME1 solely because I kept dying in the battle and picked that dialogue to skip to the fight.

Dammit, putting the quote button right next to the edit button and making them small is a failure of the game design!

Here are a few of mine from ME2.

"If I take my helmet off in my own home, I die. A single kiss could put me in the hospital. Every time you touch a flower with bare fingers, inhale its fragrance without air filters, you're doing something I can't." - Tali'Zorah

"Shepard, what do you think I will say? What can I say? I just killed the bravest and smartest of my daughters. There are no words...." - Samara

"I saw a krogan drink a liquified turian on a dare once. Nobody got out of that one looking pretty." - Matriarch Aethyta

"The Collectors blindside their targets. Hit and run. As powerful as they are they're cowards. They've never had to stand and fight the best of us. That's you." - Shepard

"Don't you miss the good old days when you could just slap omni-gel on everything?" - Shepard

Shepard: Careful, there goes the next shadow broker.
Garrus: Could've sworn he was muttering "T'soni" the whole time.
Liara: Not funny.

From bringing Liara to Surkesh when the yagh they have there breaks out, favorite moment in whole trilogy for me.

Good one. Another funny/cheesy line I liked comes from Grunt's  loyalty mission:

"- If I know Grunt, your answer's coming at muzzle velocity
- You do know Grunt. This varren's dead"

Ooh! tricky to only name five, but here goes!

1. "Everything that isn't constantly challenged grows weak" - Wrex in ME1 in one of the elevators on the citadel. Truly words to live by!

2. "Stand upon the ashes of a trillion dead and ask their ghosts if honor ever mattered!" - Javik, hell love him or hate him there is no way to dislike that line!

3. "You'd make a great father/mother" - Anderson to shepard in his extended death scene, dunno why this line always gives me goosebumps but i guess it's beacuse it's such a perfect line coming from anderson in that very moment.

4. "You know, i had my doubts about the council but after years of ignoring your warnings they are finally able to step up and say that they just can't help" - Joker...gotta love that man!

5. "i. look. ridiculous.." - Wrex when you take him on the casino mission in citadel dlc.

An honorable mention is "the best..." from shepard at the end of the citadel dlc but that line looses it's value when it's just qouted out of context. The whole trilogy needs to have been experienced and the whole scene needs to be taken in for that line to really have it's full intended bite.

5) "I want you to know that no matter what happens... You've been a champion to the Krogan people, a friend of Clan Urdnot... ...And a brother/sister to me. To every Krogan born after this day, the name 'Shepard' will mean 'Hero!' Now, let's show them why.
-Wrex

4) “You all know the mission, and what is at stake. I have come to trust each of you with my life -- but I have also heard murmurs of discontent. I share your concerns. We are trained for espionage; we would be legends, but the records are sealed. Glory in battle is not our way. Think of our heroes; the Silent Step, who defeated a nation with a single shot. Or the Ever Alert, who kept armies at bay with hidden facts. These giants do not seem to give us solace here, but they are not all that we are. Before the network, there was the fleet. Before diplomacy, there were soldiers! Our influence stopped the rachni, but before that we held the line! Our influence stopped the krogan, but before that, we held the line! Our influence will stop Saren; in the battle today, we will hold the line!”
-Kirrahe

3) "Human, you've changed nothing. Your species has the attention of those infinitely your greater. That which you know as Reapers are your salvation through destruction. You have failed. We will find another way. Releasing control!"
-Harbinger

2) "Had to be me. Someone else might have gotten it wrong."
-Mordin

1) "Does this unit have soul?"
-Legion

"Our best chance against the reapers is to turn their own resources against them. My goal is to save humanity from the reapers. At any cost. I've never hidden that from you. Imagine how many lives could be saved if we keep this base intact and use its knowledge to thwart the reapers. Imagine the lives that will be lost if we don't." -- The Illusive Man

I loved the quote from Shepard after killing the Rachni Queen...

Turian councillor:'Do you take pleasure from committing genocide, Shepard?'
Shepard: 'Depends on the species, Turian.'
