However ME1 on PS3 is bugged to all hell! Loading times are longer, some audio is skipped over entirely (Sovereign's defeat was completely muted for me) and playing as a War Hero I did the Toombs mission and the Sole Survivor dialogue came up.
I do not recommend it. Stick with PC or 360.

Would love to try it for the PC one day, but more for the user interface, hotkeys and therefore fluid gameplay.

Simply travelling from the Embassy to The Consort by the quick travel terminals, the PS3 version is almost painful to behold.
Yeah the PS3 looks a little crisper when it is fully loaded but getting to that point isn't worth the extra time it takes to get there.
I own the trilogy on PS3, 360 and PC. The PS3 version of Mass Effect 1 is definitely the worst of the three incarnations.
Edit: Bear in mind that I am also playing Mass Effect 1 while it is installed to my 360's hard drive.

I have the disc version of ME1 from the Trilogy, haven't had any issues other than a freeze near the end of my first playthrough. I haven't really noticed any texture pop-in but then again I have autosave enabled so everything has probably already loaded in by the time the autosave is finished.

However, developers are now saying that the PS4 is very easy to develop for, so that might prove to be the best ME experience of next gen.

Edge of Reality did a post last year on Bioware's blog that briefly talked about how they went about porting ME1 to the PS3. I did find it strange that ME3 had framerate issues at times on the PS3 when ME2 didn't and ran a lot better in general.

This is because ME3 uses a different engine than ME2, which the PS3 does not have enough memory to utilize correctly. To minimize the issue, you should restart your PS3 every few hours while playing ME3 (for the multiplayer fixes, see the second link in my sig).AWT42 wrote...

All three Mass Effect games, regardless of the platform they are on, use the Unreal Engine 3.
Your suggestion to restart your PS3 every couple of hours is a good one but to be honest people should be taking regular breaks from playing anyway.
