Yes.

It is my understanding that you can change your appearance and class, but not the story decisions that were made.

I assume the video is nice, but I'm not watching it. Not that it has spoilers because I know it doesn't, but I just want to have some element of "surprise" and "first time experience" with ME2. All of these videos will just ruin that.

Those are player-dependent, they aren't set for every game. These choices reflect those made by the player that is importing that particular sheperd.

I'm guessing you can't change the choices or anything else apart from the class right? Or do you do that at a different part of the game?

What about NG+ Saves? It looks like we can only import the save that was last created for each character.
