I know The Last Airbender and Legend of Korra are supposed to be good, but what else is there? I've heard there are some really dark and mature ones as well as hilarious comedies. So...what's on the menu? And the most important thing of all: where can I watch them online?

Ghost in the Shell (be sure to watch the original version, not 2.0, the latter one is loaded with nonsensical CGI, original version is much better and visually coherent!)

I generally don't like pointing people to particular shows. Half the fun is finding series and genres that you enjoy. People like a bunch of different stuff, and I do worry that I will point somebody to something I love but something they hate.
Go to an anime site or a streaming site, and just search for something that catches your eye. You will find a lot of what I'm talking about here in the anime thread. Some people love stuff, some people hate stuff. I wouldn't start with the classics right away. It's good to see what is standard so you can learn why something is great. Or you could just watch what you enjoy.

I pride my self in avoiding spoilers. I wanted a thread that pointed me to anime shows, walking into that might have spoilt a few things for me so I decided to play safe.

Hmm, Crunchyroll is a good place to start if you don't mind watching subs, Hulu is a good place if you want subs and dubs, and the Funimation site (IIRC) has mostly dubs. Each of those sites have a basic free streaming service and a super mega fudge coated premiuem service, which usually grants you early access to shows or allows you to stream shows in HD and on devices other than laptops.
As for really good anime, in my opinion...FLCL, Steins;Gate, Toradora, Death Note, Black Lagoon and Beck: Mongolian Chop Squad.
Each of those shows display what each genre is capable of when they are done right. Though, like I said, I personally enjoy just going through shows until I see something that catches my eyes.

In order to lose your animerginity, you should marathon all of NGE, FLCL, TTGL, PSG, CBB, GITS, CG and throw in a couple of new shows like SNK and KLK and everything ever made by Ghibli. I'd recommend the Hellsing OVA's just because. And watch Akira.simfamSP wrote...

Excellent list. I second Ghost in the Shell (1.0, not the remake) and Akira. I would also add Ninja Scroll and Vampire Hunter D (both Vampire Hunter D movies are good, but the first one from the late 80's is AMAZING!).
Also, I'm a big fan of an anime movie called Blood Reign: Curse of the Yoma. Check that one out, it's much less known.
