Why do so many not rate Ashley as high as the other girls?

OP asked the question and those are both valid answers. Its only a play on words that make them sound like opposites, they're actually part of the same problem. A better way of expressing it is "Ashley is xenophobic and inhumane".
On the flipside this is why people like tali and garrus so much more. They act like actual people.

Here, sure. But that's here.
Outside the BSN, she's just the same character with her hair down and a goofier outfit kinda like those in ME2.
Well, the vast majority of people I know don't really put a lot of thought into it. Kind of makes me envious of them.

I like ash's armor in ME3 but I hated her hair. Only because it was impractical for a soldier. I think she may actually look great with short hair, imo.

I think it is implied that all of the Normandy crew dies (like most of the galaxy) in low-EMS destroy, or at the very least all the important crewmembers.

It does, but you don't see anyone coming out, I just took the door opening as either some unimportant NPC or an automated system doing it. Either way, all the characters we do know are dead.
That is my interpreation of the scene.

I just interpret it as the same kind of bad cliffhanger "What if?" scenario as the breath scene. It could be just a nobody crew member, sure. /shrug I just thought it'd be funny if they were the ones who survived.

No, that's highly improbable. I think most spaceship would do the exact opposite thing!
Think about it: They cannot know for sure whether this planet in fact is earth-like; with a breathable, non-poisonous atmosphere!

You might find it laughable but it's absolutely true. As stated by the writers themselves. I'm paraphrasing here but it was something like "The reason Tali and Garrus became love interests, even though it wasn't our intention to begin with, is that they acted like people and that made people want to get to know them better." They got a lot of feedback to that effect and that is why those characters are now LI's. So yeah, you might not like the characters, but it seems that most people did.

James deserves better. Still this had me cracking up for a bit.
I'd totally do a Femshep run with James as an LI, minus the fact that you really can't get him as an LI.
That said, I pair him off with Dr. Ann Bryson of all people. Let the ship wars commence!
For me:
Shepard/Miranda
Joker/Kelly
Adams/Michel
James/Ann Bryson
Jacob/Brynn Cole
That's all I got.
