Well, maybe it would be better to say Gold gets boring when everything dies in seconds and you spend most of your time running from one spawn to the next than actually fighting the enemy.

It's only a challenge if you don't take top tier builds/guns... Even then it's just more kiting/RHA. If you rock infiltrators/grenades and level X URs... Plat is no challenge at all.
Running the melee Human Adept and getting 50 melee kills is far more fun than say... Black Widow/Harrier/grenade spam.

For me, it is due to the poor quality of Gold pugs as of recently. Like some others most of my friends have moved to other games as well. When you have a high level or maxed manifest, Gold just feels really simple. In addition, I find it tough to have fun on Gold as often because most of the pugs you play with are not very good. Therefore I view most Gold games as potential solos than actual fun co-op play. If I liked doing solos then I would just do that. However it sucks to have to always work to carry others to victory, especially when many of them are simply not ready.
Now with Plat if you were to ask me do I think it is more fun, not really. However the challenge fits the bill for a high level manifest and skillful play. While it takes longer to find a good pug Plat lobby, once you do those players tend to be far more capable.

On Plat, you at least have to fight the enemy. Your gear choices and consumable usage becomes more important. You can't be as wasteful with your consumables in regards to decision making etc. I would say that Plat is more enjoyable, but thats my opinion.
