It's because there is a lot of games in which you can play a white character and very few with a black PC.
I have no interest in playing a character who looks like myself, but those who want have much more games to do so if they are white.

Your privilege is showing. White characters are considered default, and PoC rarely get the same amount of coverage as white people. To simply say "go play another game" is incredibly insensitive and anti-inclusion, especially since we are talking about the company that strives to be inclusive to all gamers, not just the straight white male.

Why not? This is not Earth we are talking about. The peoples of thedas could have evolved differently, and that is assuming that there is evolution in the world of Dragon Age.
Even if the chasind's features originally adapted to a warmer enviroment they could have migrated or the weather could have changed drastically since then.

While I agree with your principle, I don't think "go play another game" is at all what Kalas was saying. Kalas was more wondering why people would find it so difficult to enjoy a game just because they didn't share the ethnicity of the protagonist. in any case, Cahir doesn't even look black and we've seen other Chasind in Lothering more obviously pale and possessing red hair in at least one case.

As much as I like to make parallels between fantasy worlds and reality, it doesn't have to work that way.
The races in the world of Dragon Age don't have to be a reflection of the real world. That means that features we associate with black or white people can be combined differently. Maybe they can be black and redheaded, maybe some chasinds are black and some aren't. Maybe some chasinds were from somewhere else before living in the Ferelden Valley and they mixed with other whiter people.
This is all speculation ofc, anything is possible. I'm not trying to say that the Chasind are black, just that they, or at least some, could be. Maybe it'll turn out that the people from the western half of Orlais are black and there is several ways it could be written so it makes sense, if the devs want to have more black people in DA.

This reminds me of the Aiel from The Wheel of Time: blond/redheaded people with tanned skin living in a desert. The books also featured a single continent with a wide variety of ethnicities. Considering all the inspiration DA obviusly takes from WoT, I wouldn't be surprised if the dichotomy was taken specifically from that series.
