I'm thinking about possibly doing one final playthrough of Dragon Age Origins and Dragon Age 2 in preparation for Dragon Age Inquisition, and was wondering which Origins story most people recommend. I've only ever done the Human Noble, but I am now pretty compelled to do the Dalish Elf Origin. For people who have played both, which do you think is the better origin?

They're much too different to compare. I wouldn't say any is better than the other, they just invest in completely different stakes. A human noble puts all his stakes in the Landsmeet in example, the political game is what he's been born into and raised to do. A dalish wouldn't even care, it's just a bunch of shem yelling at each other.
Since you've already done the human noble, it's worth trying another origin just to see how they play out different. As a dalish in particular, you're gonna get racism from both humans and dwarves, get lumped with the city elves but also take BS from them, get a little shade from the other dalish clan you visit too... basically no one will like you. It's an interesting experience.

I assume you've heard rumors that the dalish elf warden is considered 'canon' for the DA3 game background

Dalish Elf is kinda nice because it begins with an eluvian, which is where Witch Hunt ends, giving DA:O a nice book-ended feel. It also has strong ties with DA2 since your clan is Merrill's clan, and various mentions to you will be made by her in DA2.
However, it does bother me that both Merrill and Merethari (both of whom appear in the Dalish Elf origin) were redesigned for DA2 and sound and look completely different. I'm quite a pedant like that.
It is indeed the 'canon' origin for DA3, but that shouldn't factor into it, really. In this case, it just means it's the default origin for people who haven't done the previous games.
The human noble origin also annoys me. I know people like it because they consider it well integrated into the main story and allows for a bonus ending for your warden, but I think the origin itself is twee, predictable and in places badly delivered.
These are my two least favourite origins, for those reasons. If the redesign doesn't bother you, I say Dalish is the stronger of the two, but tbh, if I were you, I'd go with one of the others.
City Elf is exciting. Mage is a great introduction to how magic functions in the DA world. And returning to Orzammar as either of the Dwarf wardens is brilliant. I particularly enjoy the Dwarf Noble origin though, simply because it can play out different ways.

We have a default canon, which applies if you import nothing.
