Traynor and Cortez weren't huge parts of the series. Yes they were characters and they had their important moments, but everyone else was more important. Shepard was the player character and the protagonist. Saren and the Illusive Man were people we fought against. Everyone else on the poster were people we fought alongside.
I'd also like to point out, Admiral Hackett and Admiral Anderson, two characters who are much more important to the story than Traynor or Cortez, are also not in that giclee.
