Jack would still be a good choice, but I don't see the overarching story of her meshing with what you have described as well as a Tali romance would.
Also, Tali's death would add some fun roleplaying to the Rannoch arch. Does Shepard stick with the Quarians through thick and thin in memory of his love, or does he fail her again, destroying what she held most dear?

Jokes aside, I guess this comes with the territory for a choice-based game, but admittedly, there's some choices I just don't bother with, because I find them wholly disatisfying. I guess it's mostly that I find that level of misery inconsistent with how I see Mass Effect in general. Despite all the reapers, death and techno-zombies, there was often a gleeful sense of killing your enemies and leaving victory in your wake in the other entries.

Of the two, Tali, but really, the whole thing is silly, I don't care how the woman felt about it, I wouldn't go out with her if there was a chance I was going to make her throw up, but I guess everyone is different.

I metagame for 'full win' with my MainShep, pretty much. I want to see the 'best victory possible'.
But the rest? Heck yes I want to see them experience a different journey. I imbue them with real flaws and forsake anything close to MarySue mentality while playing them. RacistShep sympathizes with Cerberus but doesn't quite agree with him, is biased towards what humans want in conflicts, sees AI as tools. EngeineerFemShep is more butch when possible but very loyal to any of those who offer to be loyal to her, but she still sees Geth more like the Quarians do. AdeptFemShep is highly spiritual (when possible), believes in the soul, and wants the best of fortunes to all sapient species.
Things like that. And sometimes, that means certain characters may have to die based on our character decisions, and what may fit the drama.
Writers themselves have to do this - kill off characters to serve either the plot or central character story. Playing a RPG and actually RPing in it is like.. in the middle. We're part reader, part writer.

Shes not that kind of character.
It wouldn't be productive, for sure. You'll just feel like an empty husk.. the very thing she feared herself when you start the romance. And that kind of Shep would probably just **** up the entire galaxy with a low EMS destroy playthrough. At least I would. "Everyone must die now!"
Anyways.. the worst thing about any of Jack's possible deaths is that they're all very uncerimonious. Just senseless deaths without cinematic flare or drama. And they're all for careless reasons. Not like, say, Ash/Kaidan, Wrex, Tali or Legion in ME3, where it's a really "rock in a hard place" sort of decision. You have to be a careless Shepard to get Jack killed in either game. That would be the hardest thing to live with -- knowing that you're ****ing stupid. Same kind of goes for Garrus.

It feels empty with a default file. I wouldn't use it as a template for anything but stupidity. The only kind of player who would realistically play that way is either a toddler or some dumb/airhead spouse, who picked it up to waste some time. I mean, like a person who just doesn't play games much and just presses random buttons, and turned on the computer while they were alone. You know those people. If that's truly default Shep, then the universe is ****ing doomed.

Yeah. I mean, it feels like much more of an uphill climb. Relative to it, FullTransferShep felt (narratively) like a cakewalk.
With a default file, sure, it is more empty. But.. it also felt more true to what the devs were making, in some ways. Things like the dreams and more.. made more sense. A full transfer file, I guess, has too much 'hope'
Anyway. You know my general thoughts on the story
