Characters that I use no fitness on:
Human Adept
Salarian Engineer
Asari Vanguard (though I never use Stasis anyway...)
Qurian Female Engineer
Asari Adept
Krogan Sentinel
Salarian Infiltrator
Geth Engineer
Batarian Sentinel
Vorcha Sentinel
N7 Paladin
N7 Destroyer
Drell Assassin
all Volus
Geth Trooper
Batarian Slasher
Asari Valkyrie
Talon Mercenary (I never play him though so it's kind of irrelevant)
I think about an equal number of characters skip passives as opposed to fitness, so.

Was it hard to adapt to that? No. I spend the bulk of my ME3 hourslaying mostly Drell, so I was already used to have 3 hitpoints, the gates. What was harder was getting used to the normal speed of the characters, instead... xD
Yeah, it's always painfull. Especially when you like using Adrenaline 3 on your Drell.

That's the wrong way of looking at it. You don't sacrifice survivability for DPS, you sacrifice tankiness for DPS. DPS increases survivability, and instead of tankiness you depend on speed and positioning. You don't need to be able to take a lot of damage if you don't take a lot of damage. Oh, and gates, obviously.
I can't remember them all, but I use no-fitness/adrenaline combo on these kits at least: FQE, HE, AA, Huntress, Paladin, SI, FQI.

Any infil can have that build. As a matter of fact infils could go zero in fitness no cyclonics and run around naked with just their weapon and be in less danger than a fully spec'd Krogan warlord.
Then you are playing the Krogan Warlord wrong...
OT:
I can't really speak as a solo player, back when I first started playing more aggressively, and when I was speccing more and more into glass cannon builds I didn't do it alone, I had Team AreleX's awesome crew to back me up and even carry me if it was needed. It's not really difficult in the traditional term to transition from Fitness to No Fitness it's just first of all remember you only have 500 health and 500 shields and getting reaccustomed to getting the hell out of dodge must earlier than normal and then learning how best to position yourself so your getting shot at less than the enemies. Also make sure Collector Captains don't pop up behind you, the bloody bastards will rip you to shreds.

No, the krogan warlords are huge risks to get sync killed or have to run around looking for a ramp and have to put themsleves in harms way by their very nature. Their big abilites as I've said repeately also work agaisnt each other. Do I take lots of fitness and become even moe tanky or do I use my melle abilites and become weaker. Infils get the benefit of having the enemy ignore them or forget about them during most of the game.

I think I usually run my AA with 3 ranks as well, but will throw the Stronghold V on her.
I could see running the TGI, AIU, THS or Cabal without fitness because of healing abilities though.

Sync, with the exception of Phantoms are predictable, and in the case of Phantoms, they are a danger to everyone (if moreso to the KroLord than infiltrators). Also Tech Armour DR + Rage DR + Melee DR + 2500 Health and Shields = Tanky enough. And if you can easily take Health and Shields at Rank 4 of Fitness without weakening him if you need.

Combine that with the fact that I only use cyclonics on geth, krogan, turians, batarians, and the N7 destroyer, and thats a lot of squishy kits.
Might explain why I kiss concrete more often than I'd like, come to think of it.
There's only so many cyclonics to go round though, so I'd rather use power amps, shield regen amps and adrenaline modules on the squishy kits, since using a cyclonic on a kit with less than 750 base shields feels like a waste.

Tried no fitness builds on other kits but heat seeking Banshee balls ,rockets etc usually force me to use an OPs pack or a med gel when points in health would have saved me from doing so.

I respec'd my FQE to zero fitness (thanks) and she was great. I did find high dps enemies in close quarters to be troublesome. E. G. Collectors glacier. Must improve situational awareness.

As the title says. Are you using this kinda bulids & loadouts?
Yes, and more so recently, specially on host.
What characters get the most of it, besides the Huntress or Talon?
I've never tried concussive shots but I've hear that they aren't so good so I take full fitness on the talon.
In what circumstances having 0, 3 or even 6 points in fitness is meaningless in your opinion?
Never, as it always increases your survivability, but to different degrees with different kits. I don't take fitness on vorcha. I do on drell though becasue I don't enjoy pull. I tried it on my drell vangurad (who's equipped with the indra) but I decided to respec after a few matches. and the drellfiltrator, I think I take fitness up to 3, cause I actually like homing grenades.
Was it hard for you to get the hang of it? I mean sacrificing survivabilty for DPS.
There was actually a 2-3 week period where I confined my self to low survivability kits and would only put no or only 3 points into fitness just to get used to it. It was alright though and I got used to it.
