This thread needs more melodic death metal.
Apart from that, my taste varies when it comes to metal. Currently getting into some other or lesser known bands, because all the classical stuff just bores me to death after listening to it for like 10 years straight.

Black Sun Aeon - Cold (Melodic Doom/Death metal)
Swallow the Sun - Night will Forgive Us (Melodic Doom/Death metal)
Summoning - Old Mornings Dawn (Atmospheric Black metal. Or Tolkien metal according to their theme)
Agalloch - Not Unlike the Waves (Atmospheric Post-metal)
Månegarm - Dödens Strand (Folk/Black/Viking metal)
Ensiferum - Sword Chant (Folk/Viking metal)
Pathfinder - The Whisper Of Ancient Rocks (super cheesy Power metal. Rhapsody/Dragonforce/Blind Guardian on steroids)
Also, a honorable mention:
Devin Townsend Project - Kingdom (Progressive metal. This guy's stage presence is just nuts. Think Weird Al Jankovic of metal)
Definitely need that as a breath of fresh air, most of mine seem to boil down to the same 5-10ish bands. Magnetism was pretty neat, in a celtic sort of way. Whispering of Ancient Rocks almost has a Dragonforce vibe. I approve of Not unlike the waves, a nice slow riff. Very metal.
I liked Sword Chant until the vocals came on. Guess it's just not my cup of tea. T
