Is it? I own the trilogy on PS3, Xbox 360 and PC. For me the version on Sony's machine is no better looking than the 360 version.
Also given that it is 720 upscaled, then it also loses 'crispness' compared to the PC version.

All three of the Mass Effect trilogy use the same game engine, its the Unreal Engine 3.
It would be bnice to see them bring some of the graphical tweaks they learnt in the following two games into the first. Sort out the lighting in the comms room for a starters and how it makes my Shepard's chin vanish whenever she is in front of it.
When it comes to the other things you mention, then we are going to have to disagree. I far prefer the combat and levelling system in the first Mass Effect to that offered up in the two sequels.
Also think on how the level design out have to change to incorporate the combat system from 2 and 3. The levels tend more open and Geth hoppers would have to be eliminated from the enemy line-up.
