I would agree many of the games do need a rerelease with updates but most of them need very serious reworking and I doubt that anyone would pick up the task especially considering that new games keep coming out.

To be honest the only fix I I want for Knights of the Old Republic would be to the AI path finding.

It would drive me mad having to go back half a level to guide my team around a table.

I hope this Tomb Raider thing does not become a trend...

I'd rather they leave it alone and focus on the franchise going forward. Just put the Shepard trilogy on a shelf and let people be content with it as is. Leave well enough alone.

I think it will be done on a case by case basis.  From what I saw with the Tomb Raider re-release is that they mostly focused on a "new Lara model" which is probably going to be used for the next game and including all the minor DLC they released for the game.  It almost to me feels like an experiment to see how the updated Lara model works in the game and will base the one for the next game on that feedback.

What I disliked about the Tomb Raider: Definative Edition is the price point, but if I had a new console, I would just wait until the game dropped in price which it should do quickly like most re-releases do.
