Lore-wise it is irrelevant, since Humans and Turians can't mix...
Then again, if such mix could be feasible (synthesis ending, maybe?), then I would go for giving turian looks iincluding 3 talon fingers at members (feet and hands), but human body shape, so no wasp waist anymore.
But that is just me picturing it, surely there are some fanarts out there depicting such a Hu-rian(?)/Tur-man(?)

No, there really does need to be a human choice or they alienate a huge market segment outright.
However, I would be quite happily surprised to see them have a 'more canon' Turian protagonist but allow a Human 'alternate choice' for once
EA would still plaster the human on as many trailers as they can get away with though.

EA likes it or not, but a fully fleshed ME game with a Turian as a main protagonist would be an insta buy for me.

Really, it needs to be, for one simple reason: It's the one and only truly neutral option. Each and every alien race in Mass Effect has its own solid hate base to some degree. The humans are the only ones that don't. The goofy misanthropic lot don't really count.
