I love this game but I found the Shepard voice acting 're dull. I don't know if it was because of the way it was written, but Shepard was pretty boring when he talked; even when I would play as bad ass Shepard
I would like a voice actor who is a bit smoother

But there are some whose story doesn't really need much expansion - they're fun as background characters: volus, vorcha, elcor, hanar etc.
One race I'd like to see more of is the batarians. They suffered worst out of the Reaper war and I think attitudes toward them changed the most through the trilogy - from an aggressive race into a wounded and suffering one. Seeing them attempt to rebuild after their losses would be interesting.

- Yagh becouse they were never realy a true part of the Universe just one sidestory. They can be added in later content anyway.
The all other races should make it to the game
There is a huge possiblity a lot of races can get extinct
For Example
Elcor - only a hendfull fled from Dacuna to Citadel - and then the Citadel hets Reaperfied - how many ramain ? hundreds ?? Thousand(s) ??
Hanar - if you didnt do or do Badly Kasumi quest in ME3 - Kahje is no more. They are a species that areny that widely spread so they must be on the grink of extincion now.
Drell - same story - altho some must still survive on Rakhana - though I belive they would be far diffrent from the Drell we know at least in cultural sense
Krogan - in some endings it is shown that Tuchanka is Barren - not a lot of Krogan females away from Tuchanka, so if Tuchanka falls Krogan can be no more.
Batarians - they would probably not extinct as they are quite widespread especialy in terminus which didnt faced that much of Reaper forces. Not much can be said about females of the species, we didnt seen any, so its possible that in their culture females are rearly allowed form their homes. Still They got a plenty of colonies. They wont be that powerfull anymore though.
Humans - after abductions of the colonies by Collectors ... Desolation of Earth .... Fall of Arcturus ... Fall of Citadel ... Decimation of Aliance Fleet durring the deployment of Crucible ... - I think you all get the picture ...

The only race I can't stand is the vorcha; they really are pointless and annoying even for dumb canon fodder. Can't we find something else to shoot, anything else? Besides the vorcha, while technically racists and not a race I think we can all agree that Cerberus need to never appear again in Mass Effect canon.

Oh, and given how abundant and widespread Cerberus seems in ME2&3 might as well call them a goddamn race, hell you see more Cerberus troops in ME3 than any other singular race (apart from Reapers).
Cerberus: Never again.
(but judging by the comics I bet they're going to be everywhere again...)

As much as cheap this idea sounds, it could be possible for remnants of Cerberus to try to rebuild and use retrofitted Reaper tech in various ways to achieve that.

Here here. I found Drell to be one of the most interesting species in the entire series because of their unique circumstances and the cultural implications of their perfect memories. I say they could stand to be fleshed out more as a species. All the species that got a short billing in the original series could use some fleshing out, rather than adding them to the chopping block entirely.
As for species I could live without? Humans, yup definitely humans. Such relative newcomers to the galaxy, their history and culture isn't nearly as rich as basically any of the other races.

Geth because I just hate everything that was done with them in ME3... and I already hated them before that. Plus, the most popular ending has them gone, so this is statistically the most likely race to be gone in most players' games. This is the only race that I actually WANT gone, instead of just one I'd pick to be gone if I had to pick.
Vorcha because they're mostly pointless and one note anyway. If the vorcha don't count for whatever reason, then the yahg.
Oh, and the Yoomans, i.e. Cerberus.
EDIT: The Reapers don't count, do they? If they do, then geth and Reapers.

Geth, because they're isolated from the rest.
Batarians, there's probably not all that many of them left either. And they're boring.
Probably Hanar and Elcor too, though really I'd prefer to have more non-humanoids. And obviously Yagh, Raloi, Thorians, Rachni and other minor stuff I've forgotten. Not Volus though.

Hanar aren't as well-explored, but they have similar problem with lack of combat ability--however, I'd be reluctant to exclude them because, unlike apparently a large number of you, I'm extremely interested in exploring the Drell more--both in their cultural relationship with the Hanar, and in the small groups still eeking out an existence on their home world. I find them fascinating, and think it would be a mistake to write them off as an excuse for Thane to exist.
On the other hand, I really want to explore the Elcor in combat, as infrequent as it is, because they're fascinating in how the wage war. Their culture also wouldn't lend itself to being the focus of part of a game, and their speech might be too much for players if it's going to be a major section of the game, but they are interesting.
Anyone who would exclude the Geth is wrong, I don't care what you say. Their emerging sentience is fascinating, as is their approach to life and organics, and it would be a horrible mistake not to take the opportunity to explore that. The only reason the geth shouldn't be explored more is because they're either destroyed, not yet made, or still in their isolationist state.
