I believe the Peacekeepers were originally ancient humans who were plucked off Earth by the aliens.

We obviously don't need to hear the humans in Star Wars referred to as "human" to recognize and relate to them as human beings.

I don't think humans come from Coruscant in the SWU, it was established as the Galactic Capital long before the Old Republic timeline during the time of Xim the Despot, but maybe that canon has been abandoned. I think Chandrilla (Mon Mothma's homeworld) or Corellia is the human homeworld.
