To clarify, the difference between 1 and 3 is so immense, it's difficult, even painful to go from ME3 to ME1. Not because the first one is bad, but ME3 perfected it. It would be so cool if they would make a dlc or something, where you could play 1 and 2 with the ME3 engine. It would be a lot of work, but I would buy it.
You know what would be great? Release chapter 1 and 2 in ME3

Mass Effect 2 would take the change reasonably well, due to it also being filled with corridors piled with chest high walls. But look at Mass Effect 1's level design, it's far more open with relatively little cover.
It wouldn't just be a matter of changing the combat system, they'd need to redesign the levels around it.

The whole shooter part of ME1 really feels painfull when you return from ME3MP.
I would love having a super special edition of all 3 games in one pack, with reworked gameplay based on the best of ME1-ME3 and some finetuning (e.g. ME3's journal is a mess) but let's be honest: That will never happen.

No way, the combat in ME1 was fine. If that was done then I guess you would have to get rid of all the rpg aspects of the first game as there would not be any point in upgrading your weapon skills.

Who should define what's the best of the three games, though? I'm with Hurbster regarding ME1's combat system: it was far from perfect, but I still enjoyed it a lot. I enjoyed the biotics, their subtle visuals (no 'blue energy ball curving in the air'), how I didn't blow off all my powers at once because I might suddenly need that Throw, the lack of a global cooldown. I enjoyed that I could be jumped by Saren's lackeys outside Chora's Den without any waist-high cover yelling 'Prepare for combat!' in advance. I enjoyed being able to use my sniper rifle from great distances and switching mods depending on circumstances.
The weapons are way too similar and the inventory system was a pain. And the Mako exploration often led to identical or near-identical sheds or underground excavation sites. And the drones at the 3rd bunker on the Moon killed me a frustrating amount of times on higher difficulties. But despite all that, I still enjoyed it for the reasons mentioned above. No omni-blade gimmicks or visible dark matter, no immersion-breaking level design, no tedious defence stripping (looking at you, ME2 insanity).
But that's just me, a lot of others will feel differently. The point is, I don't see how we could decide on what's the 'best' of each game.

I like that stats play an important part of the gunplay. I like that each power has an individual cool-down, I like that specialised ammo is an upgrade and not a 'power'. I like that I can take advantage of cover without the need to be pressed against it.
When I play Mass Effect as an Adept, it feels as if I always have an option to go to. In the following two games I often felt restricted to hiding behind chest-high walls and spamming certain combos.
That of course isn't to say I don't think improvements could have been made. I would have liked the dice-roll to take into account where I was hitting the enemy rather than just that I was hitting them for example.

I liked the armor modding and the journal in ME1 and movement and weapons in ME3.
Guess it's also a matter of taste and playing ME3MP since release has spoiled me for ever.

I do think Shepard's animation is a lot better. For example running on the Normandy in ME1 doesn't make Shepard look like a gorilla with a bad back.
Also perhaps it is my imagination but I'd swear male and female Shepard have slightly different animations, whereas in the two sequels female Shepard obviously shares the same ones as male Shepard.

I love lift spamming with my entire party before using a sniper rifle or shotgun with High Explosive Rounds and shooting goons from mountain to mountain too much to allow this to happen.
