If your elf companion does not like you romantically because you are a qunari it won't be because they are a racist, but because they aren't attracted to qunari. Or a mage in your party does not fall in love with your non-mage supporter avatar (which is based off your actions). I'd even like to see romance options that will leave/break up with you if you cross the lines on their value systems.
Having these limits makes the characters seem more alive to me as I RP. It also makes my character creation even more important and carefully thought out. But that is just me and I'm fine with others not wanting this. It's all personal preference at the end of the day.
Do I think this will happen? No. Bioware is going to do what they think is best for the game and budget.

Preferences are always subject to change however. If Varric were to develop an attraction to humans, I wouldn't mind that either. I was talking more about the general principle.
