is there somewhere a starship database with length, number of weapons etc covering ALL ships in the series?

Personally I think they make it up as they go. They obviously put a lot of thought into it, but they don't sit down and go "How many guns would it have?".
I did recently find a Codex entry in ME2 relevant to this. Kilimanjaro-class Dreadnoughts carry 78 guns on each side, as well as one main cannon stretching the length of the ship.
