How come there's no video with our Jacob's info?
I kid, I kid. But I don't think Jacob really needs one seeing as he already had his own game.

"I'm fighting for humans. I want to save them." = not interesting or edgy.

If you want some info on him, though, here's his entry on the Mass Effect Wiki:

And before someone says it NO THERE WILL NOT BE A FIGHT FOR THE LOST VID OF HIM. To the idiots who couldn't figure out that the FFTL vids used the Cinematic models, Jacob doesn't have a cinematic model.

Even if it's not a 'Fight for the Lost' video he should still get a gameplay vid like Tali and Samara have. And I think his FFTL video would be awesome! "I'm fighting because no humans die on my watch, you mess with my people I'll kick your ****!"

"Ya, I'm pretty much one of the few sane, reasonable people you'll see for most of this critical mission. I'm a pretty awesome dude. I'll get the job done, but help would be welcome. See you on the front line!"
Yes, he is very controversial and mesmerizing. Jacob is just a cool guy.

Another theory I have is that all the squad members that have been featured to date are Shepard’s biggest threats within his own squad. Grunt, Miranda, Thane and Subject Zero are either crazy, extremely fanatical, immoral or all of the above.
While not saints, I’d wager that your other teammates are far less likely to stab you in the back, however the featured ones may possess critical skills/Intel that will be vital if you’re going to complete your mission in one piece, hence why gaining their trust/loyalty (and the deeds one must undertake to do so) has been so prominent in the media.
Maybe all the featured members are compulsory whereas the others are not, I don't know. However, as a character who’s starred in his own game and is a potential romance option for Shepard I don’t believe Jacob Taylor has been neglected (to date) in the continuity of the ME universe.

He's not 'edgy' enough, sadly, the target audience is more likely to respond positively to a 90s Anti-Hero than a genuinely well thought out character.
I think you mean 80's anti-hero.
Anyway, he's just a guy. The hot chicks and the aliens get more attention. Just like how in the first game it was all about Ashley and Garrus. Got nothing to do with how developed he is as a character. Or if he's more genuinely well-thought out than the other squad-mates. (Considering we know so little about him I'd say that's a leap...)
EDIT: Also, they want all the attention on Shepard. Don't need another rooster in the henhouse messing that up. Marketing-wise that is.

More like," I am fighting for humans, because i am human, and i like humans to be alive"
That would honestly make me jump out of my chair and go buy this game, that is if i didn't know about it already.
